For the Dough:

  • 1 cup rice flour
  • 1 cup water
  • 1 tsp ghee
  • A pinch of salt

  • 3/4 cup jaggery (grated)
  • 1/2 tsp cardamom powder

Step-by-Step Process

1. Preparing the Dough:

  • Boil water with a pinch of salt and 1 tsp ghee in a pan.
  • Once the water boils, add rice flour gradually while stirring to avoid lumps.
  • Cook for about 2-3 minutes until the dough comes together.
  • Cover the dough and let it steam for 5 minutes on low flame.
  • Once the dough cools slightly, knead it into a smooth, soft consistency.

Tip: Use warm water to knead if the dough feels dry. A well-kneaded dough is essential for smooth, crack-free Modaks.

2. Preparing the Filling:

  • In a pan, melt the jaggery on low heat until it becomes syrupy.
  • Add grated coconut and cook the mixture for 4-5 minutes until it thickens.
  • Sprinkle in the cardamom powder and mix thoroughly.
  • Let the filling cool completely before you use it.

Tip: Avoid overcooking the jaggery, as this can make the filling too hard. Keep stirring the mixture on low heat.

3. Shaping the Modaks:

  • Grease your hands with a little ghee to prevent the dough from sticking.
  • Take a small ball of dough and flatten it into a circular shape with your fingers.
  • Place a spoonful of the coconut-jaggery filling in the center of the dough.
  • Gently fold the edges of the dough over the filling, pinching to form pleats. Bring the pleats together at the top to form the characteristic Modak shape.

4. Steaming the Modaks:

  • Heat water in a steamer and grease the steamer plate with ghee to prevent the Modaks from sticking.
  • Arrange the Modaks on the steamer plate, ensuring they don’t touch each other.
  • Steam the Modaks for 10-12 minutes until they become soft and slightly translucent.

Tip: Steam on medium heat to avoid overcooking the Modaks. They are done when the dough looks translucent, and they feel firm to touch.

1. Fried Modak

  • For a crispy alternative, follow the same steps to prepare the dough and filling.
  • Instead of steaming, heat oil in a deep pan and fry the Modaks on medium heat until they turn golden brown.
  • Tip: Ensure the oil is hot enough before frying; otherwise, the Modaks may absorb too much oil.

2. Diet Modak

  • For a healthier version, replace rice flour with whole wheat flour or millet flour for the dough.
  • Substitute jaggery with coconut sugar or dates for a natural sweetener with a lower glycemic index.
  • Tip: Use minimal ghee to keep the calorie count low while maintaining flavor.

3. Sugar-Free Modak

  • To make Modak sugar-free, replace jaggery with natural sweeteners like stevia or erythritol.
  • Ensure the sweetener you choose is suitable for cooking and can withstand heat without breaking down.
  • Tip: Taste the filling while cooking to adjust the sweetness, as sugar substitutes may vary in intensity.

Proper steaming: Over-steaming can make the Modaks chewy, so keep an eye on the time.

Avoid cracks: Ensure your dough is soft and pliable. If it dries out, wet your hands and knead it lightly before shaping.

Damp cloth: Keep the dough covered with a damp cloth while shaping the Modaks to prevent it from drying out.
