Step-by-Step Mushroom Chilli Recipe

1. Preparing the Mushrooms

  • Start by cleaning the button mushrooms thoroughly and pat them dry with a clean kitchen towel.
  • If the mushrooms are large, cut them in half. Smaller mushrooms can be used as they are.
  • In a bowl, prepare a batter by mixing cornflour, all-purpose flour, salt, black pepper, and water. It should be smooth and slightly thick.
  • Coat the mushrooms evenly with the batter.
  • Heat oil in a deep pan and fry the mushrooms until golden and crispy. Once done, drain them on a paper towel to remove excess oil.

2. Making the Sauce

  • In a separate pan, heat some oil and add chopped garlic, ginger, and green chillies. Sauté for a few seconds until the garlic is fragrant.
  • Add the cubed onions and capsicum and stir-fry for about 2 minutes. The veggies should stay crunchy.
  • Pour in the soy sauce, red chilli sauce, tomato ketchup, and vinegar. Stir the mixture well and let it simmer for a minute or two.
  • Add the cornflour slurry to thicken the sauce slightly, giving it a glossy finish.

3. Tossing the Mushrooms

  • Add the crispy fried mushrooms to the sauce and toss everything together. Ensure the mushrooms are well-coated with a flavorful sauce.

4. Garnishing and Serving

  • Garnish with finely chopped spring onions and serve your Mushroom Chilli hot!
  • You can serve it as an appetizer or pair it with fried rice or noodles for a complete meal.

Alternative Sauce Variations

  • Sweet and Sour Mushroom Chilli: Add some pineapple juice or chunks along with a pinch of sugar for a sweet and tangy twist.
  • Garlic-Loaded Chilli: Increase the garlic quantity if you love bold, garlicky flavours.
  • Dry Mushroom Chilli: Skip the cornflour slurry and reduce the sauces for a dry version, perfect as a snack.

Tips and Tricks

  • Make sure your mushrooms are dry before frying them to get the crispiest texture.
  • Adjust the spice level according to your preference. Add more chillies or chilli sauce for a hotter dish!
  • Don’t overcook the onions and capsicum. They should retain a bit of crunch for that perfect bite.

FAQs About Mushroom Chilli Recipe

1. Can I use other types of mushrooms?

Yes! While button mushrooms are most commonly used, you can try this recipe with other varieties like oyster or shiitake mushrooms for a different texture and flavour.

2. How can I make the dish less spicy?

To make the Mushroom Chilli less spicy, reduce the number of green chillies and use less chilli sauce. You can also balance the heat by adding a bit of sugar to the sauce.

3. Can Mushroom Chilli be made gluten-free?

Absolutely! You can replace the all-purpose flour with rice flour or a gluten-free alternative in the batter. Just make sure the soy sauce you use is also gluten-free.

4. Can I make this dish in advance?

It’s best to prepare the Mushroom Chilli fresh so that the mushrooms stay crispy. If needed, you can fry the mushrooms ahead of time and prepare the sauce when you’re ready to serve.

5. What other vegetables can I add?

If you want to add more veggies, feel free to throw in some bell peppers, baby corn, or even zucchini. They all work well with the spicy sauce!
